Chicken enchiladas

Quick and easy chicken enchiladas with black beans, corn, and rice.

Ingredients

Recipe

  1. Preheat oven according to enchilada sauce can instructions.

  2. In a bowl, combine shredded chicken, black beans, corn, and some of the cheese.

  3. Fill tortillas with mixture, roll them up, and place seam-side down in a baking dish.

  4. Pour enchilada sauce over the top and sprinkle with remaining cheese.

  5. Bake until bubbly and cheese is melted.

  6. Serve with rice.
